These cakes are made under California cottage food rules, which do not allow fresh dairy cream. That changes one important thing:
If you are picturing the soft fresh-cream cakes from an Asian bakery — the kind with fruit between the layers — that is not what this is. I use a light, low-sugar buttercream instead. It holds up better in the car and keeps for days, but it is a different texture. I would rather you know now than be surprised.
